Description
Rillettes is a combination of shredded meat and duck fat, seasoned and cooked confit-style. Originally this dish was made of pork and a staple of many poor family's diets. They would roast either a fatty pork belly or put a tough pork shoulder in a pot with some cubed backfat. As the meat slowly cooked, the fat would render out into the pot. After eight or ten hours of cooking, the meat would be fall-off the bone tender and infused with the flavorful fat. This intense cooking period helped to preserve the meat, making rillettes an important dish in the time before refrigeration.Made of duck, pork, and duck fat.
