A variety of celery, celery root (aka celeriac, turnip-rooted celery, knob celery) is prized for its big bulbous stem instead of slender green stalks. Roundish and rough, itâs smooth and white on the inside and needs to be scrubbed well and peeled before using immediately (it discolors like an apple when exposed to air). Grate some raw celery root into a fresh salad, or oven-roast some thick slices for a unique veggie side. It tastes like celery, except with a hint of nuttiness.
