Bring the beautiful flavors of Mexican cuisine into your home with these Homemade Sopes. Thick corn patties with a subtle hint of salt, filled with delicious canned refried beans and garnished with crumbled feta cheese and microgreens for added freshness.
In a mixing bowl, combine the masa harina and salt.
2
Add the vegetable shortening into the bowl. Use your fingers to rub it into the masa mixture until evenly distributed.
3
Pour warm water into the bowl and knead until the mixture is smooth and slightly sticky. The dough should be soft and moist, similar to the consistency of play-doh.
4
Divide the dough into eight equal portions. Keep the dough covered with a damp cloth to maintain its moisture.
5
Take a dough portion, roll it into a ball, then flatten it into a 1/4-inch-thick circle using your hands. Ensure there is a bit of a raised edge to hold the filling.
6
Heat a lightly greased griddle on medium-high heat. Cook each sope for 2 to 4 minutes on each side until dry.
FILLING AND GARNISH
7
Spread a generous layer of refried beans on each sope. Garnish with crumbled feta cheese and a sprinkling of fresh microgreens. Repeat for all the sopes.
