Cook the 2 large chicken breasts seasoned with salt, pepper, and garlic powder. Shred the cooked chicken and set aside.

In a mixing bowl, combine the 3 cups of chopped green cabbage, 2 cups of chopped red cabbage, 1 and 1/2 cups of shredded carrot, 1 diced red bell pepper, and 1 and 1/2 cups of edamame.

In a small bowl, whisk together 1/4 cup soy sauce, 2 tablespoons rice vinegar, 1 tablespoon honey, 1 tablespoon sesame oil, 1 teaspoon minced garlic, 1 teaspoon grated ginger, and 1 teaspoon sriracha.

Pour the sesame dressing over the chicken and veggie mixture. Toss well to combine.
