Direct from Tokyo's Toyosu Market! Fresh Hamachi collar or Japanese Amberjack, farmed in Japan. A fatty fish, Hamachi has a semi-soft texture and a mild, slightly sweet taste. The collars are especially prized for their succulent texture. Char over the grill and serve with soy sauce or yuzu.
