Wegmans Soumaintrain Cheese

Yellowish rind sometimes with a thin layer of white mold. Don’t be afraid to eat the rind, it's part of the cheese and very thin. Texture is soft under the rind with a very slight core, but melts in your mouth. Flavor is complex with pungent, savory, lactic, vegetal notes. It may have a slight bitterness (expected in this cheese).
