Red Dragon Fruit â also known as pitaya or the "strawberry pear" â is tropical with a sweet, crisp taste and light green pointy scales. Typically enjoyed raw in drinks, desserts and fruit salad, it can also be grilled on skewers. To use dragon fruit, slice it in half and scoop out the white, black-seeded flesh (the skin is inedible). Great mixed with mango, papaya or pineapple, it also works well as a salsa atop fish like cod, tuna and mahi mahi.
