Lion's mane or Pom Pom or Bearded Tooth is a mushroom that grows on trunks of dead hardwood trees such as oak. It has a long history of use in East Asian medicine. When cooked properly, the Lion’s Mane mushrooms are reminiscent of crab meat. It has a meaty texture and fibrous outer layer. They’re popularly sautéed as mushroom steaks in olive oil or coconut oil. Through cooking they hold their shape and are available year-round.
