Beat the 3 large egg whites in a clean, dry bowl until soft peaks form. Gradually add 1/4 cup of sugar while continuing to beat until stiff peaks form.

In a separate bowl, whisk together the remaining 1/2 cup sugar, 1/3 cup all-purpose flour, and 1/8 teaspoon salt.

Stir in 1 cup whole milk, 1/2 cup fresh lemon juice, 2 tablespoons melted unsalted butter, and 2 large egg yolks until smooth.

Gently fold in the beaten egg whites until just combined. It's okay if there are some white streaks in the batter.

Divide the batter into 5 ramekins (4-6 oz each) placed in a large roasting pan.

Carefully pour boiling water into the roasting pan, around the ramekins, filling to about halfway up the sides of the ramekins.

Bake at 350°F (175°C) for 25 to 30 minutes, or until the tops are golden and the cakes are set. Remove the ramekins from the roasting pan and allow them to cool slightly on a wire rack.
