Season the flank steak with salt and black pepper, then grill or sear the steak until browned, about 4 minutes per side. Wrap the steak in foil to rest.

In a large skillet, heat the remaining vegetable oil over medium heat. Cook the baby bok choy, bean sprouts, mushrooms, and yellow squash until tender.
