Directions
6 STEPS
1
Preheat a grill or a large non-stick skillet over medium-high heat.
2
Season the flank steak with salt and black pepper, then grill or sear the steak until browned, about 4 minutes per side. Wrap the steak in foil to rest.
3
In a large skillet, heat the remaining vegetable oil over medium heat. Cook the baby bok choy, bean sprouts, mushrooms, and yellow squash until tender.
4
In a separate pan, fry the eggs sunny-side up, until the whites are set but the yolks remain runny.
5
In a small bowl, whisk together the mayonnaise and sriracha sauce to make the sriracha mayo.
6
To assemble the bowls, place a scoop of cauliflower rice in each bowl, and arrange the cooked vegetables around it. Add slices of the cooked steak with any reserved juices. Top each bowl with a fried egg, and drizzle with sriracha mayo sauce. Adjust salt and pepper to taste, if necessary.
