Generously season the chuck roast with salt and pepper on each side

In a large skillet, heat the olive oil over medium-high heat

Sear each side of the roast for 3-4 minutes, until a golden brown crust forms

Place the seared roast in the slow cooker

Add the beef consommé, beef broth, sliced onion, soy sauce, and Worcestershire sauce to the slow cooker

Cook on low heat for 8-10 hours or on high for 5-7 hours

Remove the roast from the slow cooker and shred with a fork

Place shredded roast beef on hoagie rolls and top with 2 slices of mozzarella cheese each

Preheat your oven's broiler and position the rack about 6 inches from the top

Place the open hoagie rolls with roast beef and cheese under the broiler for 2-3 minutes, or until the cheese is melted and bubbly

Serve the sandwiches with the remaining au jus sauce from the slow cooker for dipping
