Set the Instant Pot to Sauté mode and add the chopped bacon.

Cook the bacon, stirring occasionally, until it has rendered most of its fat. Remove and set aside.

Add ground hot Italian sausage to the Instant Pot and brown it, stirring occasionally.

Once browned, spoon out all but 2 tsp of fat from the pot.

Add the chopped onions and dried oregano to the pot, stirring occasionally until the onions become translucent.

Add the minced garlic and stir for a minute.

Pour in the chicken broth, making sure to scrape the bottom to release any browned bits.

Mix in the cubed potatoes and cooked bacon, ensuring not to exceed the Max Fill line of the Instant Pot.

Cancel Sauté mode, close the lid, and set the steam release knob to Sealing.

Set to Manual or Pressure Cook mode, choosing 5 minutes on High Pressure. The pot will take a few minutes to come to pressure.

After the cooking cycle ends, allow a 10-minute Natural Pressure Release (NPR), followed by a controlled Quick Release for the remaining steam. Open the lid once the pin drops.

Add kale (or thawed spinach), stirring well. Cover and let the kale soften for 5 minutes. If using spinach, you can proceed to the next step immediately.
