Preheat oven to 400 degrees F.

In a large cast iron skillet, heat 1 tablespoon of the coconut oil over medium heat.

Crumble the sausage into the heated skillet. Sprinkle with red pepper flakes and cook until browned, stirring frequently.

Add diced onions and bell peppers to the sausage. Continue to cook and stir until the vegetables are softened.

Transfer the sausage and vegetable mixture to a bowl and set aside.

In the same skillet, heat the remaining 2 tablespoons of coconut oil. Add the chopped sweet potatoes and stir to coat. Season with paprika, sea salt and black pepper.

Cover the skillet and cook until the sweet potatoes are softened and browned, stirring occasionally and adjusting the heat as necessary to prevent burning. This should take about 7 minutes.

Return the sausage and vegetable mixture to the skillet and mix together.

Create four wells in the hash and crack an egg into each. Ensure the yolks don't break and the whites are contained within the wells.
