Pat the chicken breasts dry and evenly slice each horizontally into two fillets. If the fillets are uneven in thickness, use a meat mallet to pound the thicker ends.

Combine kosher salt, black pepper, and all-purpose flour in a shallow dish. Season both sides of the chicken fillets with the flour mixture, reserving the leftover flour.

Heat olive oil in a heavy skillet or frying pan over medium-high heat. Once shimmering, add 1 tbsp unsalted butter and the chicken fillets. Cook the fillets for 3-4 minutes per side or until golden brown.

Transfer the cooked chicken fillets to a plate, tent with foil, and set aside.

With the pan still on low heat, add 2 tbsp unsalted butter and minced garlic. Cook for 2 minutes until softened but not colored.
