Preheat your oven to 400°F.

Trim any silver skin and excess fat from the pork tenderloin. Sprinkle all sides with sea salt, and set it in a roasting pan or large cast iron skillet.

In a food processor or high-speed blender, combine the softened dates and water on high speed until a paste forms.

Add the coconut aminos, brown mustard, smoked paprika, onion powder, and black pepper to the date paste, and pulse until well combined.

Pour half of the sauce onto the pork tenderloin, making sure to coat both the top and bottom.

Lay bacon slices across the top of the pork tenderloin, slightly overlapping them. Tuck the ends of the bacon underneath the tenderloin.
