Sensational Simple Thai Noodles combines the wholesome flavors of rice noodles, bean sprouts, scallions, and Thai basil, all coated in a luscious soy sauce blend. This easy and delicious dish will quickly become a family favorite.
Cut the fresh rice noodles into 1 ½ inch wide strips and let them come up to room temperature. In a small bowl, dissolve the brown sugar in hot water, then mix in the fish sauce and low sodium soy sauce. Set aside.

Heat your wok or large skillet until smoking, and spread 2 tablespoons canola oil around the perimeter of the wok. Add the white parts of the scallions and minced garlic, sautéing for 30 seconds.

Add the chopped Thai basil and sauté for another 20 seconds.

Add the softened noodles to the wok, stirring and tossing for 30 seconds to warm them up.

Pour the soy sauce mixture over the noodles, and continue stir-frying for 1 minute, until the noodles are well coated.

Add the mung bean sprouts and the green parts of the scallions, and stir-fry for 1 more minute, until the bean sprouts and scallions are wilted.
