Indulge in a delightful combination of tender chicken, linguini and colorful veggies, coated with a luscious peanut sesame sauce. This one-pot meal is not only satisfying but also perfect for busy weeknights.

In a medium bowl, combine minced garlic, creamy peanut butter, low-sodium soy sauce, honey, vegetable oil, red wine vinegar, and hot chili oil. Mix well to create the sauce.

Remove the cooked chicken and shred it using two forks. Set aside.
4
In the same pot of boiling water, cook linguini until al dente, about 8-10 minutes. Drain.
5
In the same pot, over low heat, add the shredded chicken, thinly sliced red bell pepper, shredded red cabbage, and prepared sauce. Stir to combine.
6
Season with salt and pepper to taste.
7
Serve hot and garnish with thinly sliced scallions. Add more hot chili oil if desired.
