Preheat the oven to 350°F and thoroughly spray a non-stick or silicone muffin tin with nonstick cooking spray.

Add the finely diced bell pepper and onion to the pan and sauté for 2 to 3 minutes until they soften.

Stir in the crumbled turkey sausage, chopped spinach and halved tomatoes. Cook for an additional 2 minutes.

Evenly distribute the vegetable and sausage mixture into the muffin tin.

In a medium-sized bowl, whisk the fresh egg whites and add the salt and pepper.

Pour the egg white mixture over the ingredients in the muffin tin, filling each one up to a quarter inch from the top.
