Heat the vegetable oil in a large skillet over medium heat

Add minced garlic and ginger to the skillet, stirring occasionally, until they are crisp and brown

Using a slotted spoon, transfer the crispy garlic and ginger to a paper towel, lightly sprinkle with 1/4 teaspoon of salt, and set aside

In the same skillet, reduce the heat to medium-low, add leeks, and cook for about 10 minutes, stirring occasionally, until they are tender but not browned

Season the leeks lightly with another 1/4 teaspoon of salt
