In a small bowl, whisk together rice vinegar, sugar, and salt.

Add shredded carrots to the bowl and toss until combined. Allow the carrots to pickle at room temperature for 20 minutes, stirring occasionally.

In a separate small bowl, stir together mayonnaise and sriracha hot sauce until evenly combined. Set aside.

Preheat a grill to medium-high heat.

Grill the hot dogs directly over medium-high heat, turning often, for 5 minutes or until lightly charred and plump. Move the hot dogs to indirect heat to keep them warm while grilling the buns.

Brush the insides and outsides of the brioche hot dog buns with melted unsalted butter and grill them, cut sides down, until lightly toasted, about 30 seconds. Turn the rolls over and grill for another 30 seconds.
