In a large oven-safe skillet over medium-high heat, heat the avocado oil.

Add the thinly sliced ribeye steaks and sear for a few minutes on each side. Season with 1 teaspoon salt and 1/2 teaspoon black pepper, then remove from the skillet and set aside.

Reduce the heat of the skillet to medium and add the sliced mushrooms, sliced green bell pepper, sliced red bell pepper, thinly sliced white onion, minced garlic, and a pinch of salt and pepper. Sauté for about 5 minutes or until softened.

Add the seared steak back to the skillet and stir to mix the steak with the cooked vegetables.

Layer the white American cheese slices on top of the steak and vegetables.
