Start by rinsing the long-grain rice until water runs clear. Then soak it in plenty of cold water for 15 minutes.

Heat the olive oil in a deep saucepan. Add the thinly sliced onions, cook over medium heat until they are brown and crispy. Remove half the onions and set them aside for garnishing.

To the same pan with the remaining onions, add the rinsed green lentils, stir to combine.
