In a separate bowl, mix together the panko breadcrumbs and grated Parmesan cheese.

Dip each cauliflower piece into the batter, ensure each piece is thoroughly coated and allow any excess batter to drip off.

Roll the batter-coated cauliflower in the breadcrumb and Parmesan mix, making sure all sides are covered, then place onto the lined baking sheet.

Bake the breadcrumb-coated cauliflower for 15 minutes, then flip over each piece and bake for another 10 minutes, until they turn golden brown and crispy.

Take the baking sheet out of the oven and place the cauliflower pieces into a large bowl.
