Oven-Roasted Chicken Bites with Herbs and Parmesan Crust
These Oven-Roasted Chicken Bites are juicy chicken thigh pieces marinated in a garlicky mayonnaise dressing, coated in a crispy Parmesan and breadcrumb crust, and tossed with fresh Italian herbs. A perfect weeknight meal that's easy to make and is full of flavor!
Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.

In a large bowl, combine chicken pieces, mayonnaise, salt, Montreal chicken spices and grated garlic. Mix until well coated.

Cover and let the chicken marinate in the refrigerator for at least 4 hours, or overnight if time allows.

In another bowl, mix together the grated Parmesan cheese and bread crumbs to create the crust.

Remove chicken from the refrigerator. Roll each piece in the breadcrumb and Parmesan mix, making sure it's well coated, then place on the parchment-lined baking sheet.

Drizzle the chicken pieces with olive oil. This will help them turn golden and crispy.

Bake in the preheated oven for about 20-25 minutes, until the chicken is cooked through and the crust is golden

Take the chicken out of the oven and while it's still hot, sprinkle the chopped fresh mixed Italian herbs for that extra pop of freshness and flavor.

Serve warm, great on its own or with a side salad or steamed vegetables.
