1
Cook the whole-wheat penne pasta in a large pot of salted water until al dente. Reserve one cup of pasta water before draining
2
Meanwhile, heat the olive oil in a large skillet over medium-high heat.
3
Add the spicy Italian sausage to the skillet and cook until browned on all sides. Remove the cooked sausage, cut into ¼ inch slices, and set aside.
4
In the same skillet, sauté the green and red bell peppers and yellow onion until slightly softened. This should take about five minutes.
5
Return the sausage to the pan and pour in the red wine to deglaze, scraping up any browned bits on the bottom of the pan.
6
Add the marinara sauce, Italian seasoning, sugar, salt and pepper. Stir to combine.
7
Reduce the heat to low and let the sauce simmer for ten minutes.
8
Finally, add the cooked penne to the skillet and toss with the sausage and pepper sauce. If the sauce seems too thick, add pasta water in small increments until it reaches the desired consistency.
9
Adjust the seasoning if needed and serve warm with a generous sprinkling of grated Parmesan cheese.
