In a small saucepan, combine granulated sugar, water, and cinnamon stick, and cook over medium heat until it reaches a boil.

Remove from heat and stir in pure vanilla extract. Set aside to cool completely.

In a bowl, combine ground walnuts, ground almonds, ground cinnamon, and ground cloves.
ASSEMBLY

Cut phyllo into three equal pieces (3 inches wide).

Layer 3 sheets of phyllo on top of each other, drizzling melted butter over each layer.

Place about 2 teaspoons of the nut filling on the bottom of the strip, fold it up flag-style, and place the triangles on a baking tray lined with parchment paper.

Brush the tops of the pastries with the remaining melted butter.
