Place the stainless steel insert in your Instant Pot and press the sauté setting.

Add olive oil to the pot, and once heated, add minced garlic, chopped onion, and chopped green bell pepper. Sauté for 2 minutes.

Add unsalted butter and sauté until the onion is translucent.

Press the cancel/off button.

Add corn, black beans, taco seasoning, salt, and black pepper to the Instant Pot. Stir to combine.

Add rinsed quinoa and vegetable stock, stirring everything together.

Place the diced tomatoes (with liquid) in the center, on top of the other ingredients. Do not stir.

Close the lid and switch the valve to the sealing position. Set the Instant Pot to cook at high pressure for 5 minutes.

Once the timer is done, press the cancel/off button and let the pressure release naturally for 10 minutes. Then, release any remaining pressure manually by carefully switching the valve to venting.
