Using a vegetable peeler or a mandoline slicer, slice the zucchini into thin noodle-like strips. Pat the zucchini noodles dry with paper towels.

Heat a large non-stick skillet over medium heat and add the Italian turkey sausage. Season with crushed red pepper flakes, salt, and pepper. Cook and break apart with a spatula until browned.

Add the minced garlic to the skillet and sauté for 30 seconds, or until fragrant.

Stir in the marinara sauce and cook for 1 minute.

Add the zucchini noodles, cover the skillet, and cook for 2-3 minutes.

Remove the lid, stir in the spinach, cover again, and cook for another 3-4 minutes, or until the zucchini noodles are tender.

Turn off the heat and stir in half of the shredded mozzarella cheese and all of the cottage cheese. Season with salt and pepper, to taste.

Top the mixture with the remaining mozzarella cheese and cover the skillet to let the cheese melt.

Allow the dish to sit for 5-8 minutes to set up.

Garnish with fresh basil and grated Parmesan cheese, if desired, before serving.
