Add the diced onion, tomato sauce, diced tomatoes, coconut aminos, paprika, oregano, thyme, and ground black pepper. Stir to combine.

Place the lid on the Instant Pot, close the valve, and set the timer to 10 minutes on the 'manual' setting. After it's complete, quick-release the pressure and remove the lid.

Carefully add the chopped cabbage, stirring it in so it all fits without going over the max fill line. Replace the lid, close the valve, and set the timer to 4 minutes on the 'manual' setting. Once done, quick-release the pressure and stir.
