In your saute pan, combine extra virgin olive oil, diced red bell pepper, diced white onion, and minced garlic. Cook over medium-high heat for about 5 minutes, stirring occasionally until vegetables start to soften.

Drain excess fat from the pan. Now, add in your Italian seasoning, kosher salt, tomato sauce, ready-to-serve white rice and half a cup of shredded mozzarella cheese. Stir everything together.
