Place the sliced onions, ½ cup water, and olive oil in a large non-stick pot over medium high heat.

Stir the onions frequently, adding more water (½ cup at a time) to the pot as necessary to prevent sticking.

Once the onions are translucent and soft, reduce heat to medium and continue stirring.

Caramelize the onions for about 30 minutes until golden brown, then set aside.

Arrange the pre-sliced dinner rolls on a baking sheet.

Spread each half of the rolls with mustard.

Layer the spinach, half the cheese, roast beef, caramelized onions, and the remaining cheese on top of the bottom halves of the rolls.

Place the top halves of the rolls on your stacks, then brush the top of the rolls with melted butter.

Bake for 20 minutes, or until the cheese has melted and the tops are slightly golden.

Remove from the oven, allow to cool slightly then serve.
