1 cup finely shredded cheddar cheese

TURKEY & BELL PEPPER MIXTURE

1 tsp ground cumin

2 tbsp olive oil

2 cups bell pepper

preferably mixed colors, chopped

1/4 tsp cayenne pepper

1 lb lean ground turkey

3 tbsp fresh flat leaf parsley

finely chopped

14 oz canned diced tomatoes

drained

salt & black pepper

On the stove or microwave, cook the frozen cauliflower rice according to the package instructions. Set aside to serve warm.

Shred the cheddar cheese and set aside.

TURKEY & BELL PEPPER MIXTURE

Heat the olive oil in a large non-stick skillet over medium-high heat.

Add the chopped onion and bell peppers to the skillet. Sprinkle with salt and black pepper. Sauté until they have softened, which should take about 6 minutes.

To the same skillet, add the ground turkey, breaking it down into smaller pieces as it cooks. Sprinkle with additional salt and pepper. Cook until it starts to brown.

Add the minced garlic, chili powder, cumin, and cayenne pepper to the skillet. Continue to cook until the turkey is completely cooked through.

Stir in the drained diced tomatoes and let simmer for about 2 minutes, allowing the flavors to meld together.

Last, stir in the finely chopped parsley and remove the skillet from the heat.

SERVING

To serve, divide the warm cauliflower rice between four bowls. Top each with a generous sprinkle of shredded cheddar cheese, then spoon over the turkey and bell pepper mixture. The heat from the ingredients will melt the cheese. Serve immediately and enjoy!
