Curried Pea Salad with Smoked Almonds and Crunchy Veggies
This refreshing Curried Pea Salad features a flavorful combination of frozen peas, smoked almonds, crunchy water chestnuts, fresh veggies, and a creamy curry dressing. It is the perfect side dish for your summer gatherings or barbecues.
In a fine-mesh strainer under cold running water, rinse the almonds to remove excess salt. Spread them between two paper towel layers and pat dry. Finely chop the almonds on a cutting board with a large knife and set aside.

In a large bowl, whisk together the mayonnaise, curry powder, salt, and pepper until smooth.

Add the frozen peas, chopped green onions, chopped water chestnuts, chopped red bell pepper, and chopped fresh cilantro to the bowl.

Gently fold the salad into the mayonnaise dressing. Taste and adjust salt and pepper if necessary.
