Preheat the oven to 180°C (350°F). Line a baking tray with parchment paper.

In a bowl, combine cornflour, panko breadcrumbs, chilli powder, garlic powder, paprika, and onion powder. Mix until well blended.

Pat the chicken breasts dry with paper towel.

Coat the chicken breasts in the breadcrumb mix, pressing lightly to adhere. Place them on the prepared baking tray.

Spray the chicken generously with cooking spray.

Bake in the preheated oven for 30 minutes, or until the chicken is thoroughly cooked and the coating is golden and crispy.

While the chicken is cooking, prepare the burger buns by evenly spreading lettuce leaves and sliced tomatoes on the bottom piece of each bun.
