Crispy Cauliflower Buffalo Bites are the ultimate vegan game day appetizer, delighting both vegans and meat eaters alike! These bites are tender on the inside, crispy on the outside, and have a spicy kick. They are so delicious, you won't believe they're made from cauliflower!
Preheat the oven to 425°F and line a large baking sheet with parchment paper.
Generously spray the parchment paper with oil.
Wash and cut the cauliflower into bite-sized pieces.
In a large bowl, combine water, all-purpose flour, garlic powder, onion powder, and salt. Whisk until well combined.
Place panko breadcrumbs in a shallow dish.
Dip cauliflower pieces into the batter, allowing excess to drip off, and then coat with panko breadcrumbs. Place coated cauliflower on the prepared baking sheet, making sure they are not touching each other.
Spray the tops of the cauliflower with oil to help them crisp up. Bake for 20 minutes, then flip and bake for an additional 15-20 minutes, until golden and crispy.
While the cauliflower bakes, melt vegan butter in a saucepan over medium heat. Add Frank's Red Hot Sauce, and maple syrup or agave if using, and stir to combine. Turn off heat.
Once the cauliflower is baked and crispy, toss with the sauce in a large bowl, and return to the baking sheet.
For extra crispiness, place sauced cauliflower back in the oven for 15-20 minutes.
