1
Cook the penne pasta in a large pot of boiling salted water, according to package instructions, until al dente. Drain and set aside.
2
In a large sauté pan over medium heat, cook the chopped bacon until crispy. Remove from the pan and set aside.
3
Drain all but 2 tablespoons of bacon grease from the pan.
4
Add 2 tablespoons of olive oil and minced garlic to the pan, and cook until the garlic becomes fragrant, about 1 minute.
5
Add cubed chicken breasts to the pan and cook for 6-8 minutes, or until cooked through. Remove from the pan, set aside, and cover to keep warm.
6
Lower the heat to medium-low and add the cooked penne pasta, ranch seasoning, heavy cream, and shredded sharp cheddar cheese to the pan. Stir well to combine and cook until the cheese melts.
7
Add the cooked chicken and bacon back to the pan, and mix well.
8
Remove from heat, garnish with chopped fresh parsley, and allow to set for 5 minutes to let the sauce thicken before serving.
