Drain the liquid from a can of chickpeas into a large bowl. Set the chickpeas aside for another use.

Measure out 1/2 cup of aquafaba and add it to the bowl.

Add the cream of tartar to the bowl and mix.

Use a hand mixer to mix the aquafaba mixture at medium speed until it gets a little foamy.

Increase the speed to high and beat for about 3-4 minutes, until stiff peaks form.

Add the sifted powdered sugar and vanilla extract, and continue to beat for about 1 more minute, until fluffy and smooth.

Serve immediately for best results or store leftover whipped cream in the freezer, as it won't hold up as well in the refrigerator. It will have a similar texture to cool whip straight from the freezer!
