Line an 8-inch square pan with parchment paper, letting the ends extend over two of the sides. This will serve as handles for lifting the set bars out of the pan.

In a food processor, add the gluten-free oats and pulse until you get a fine oat flour.

Transfer the oat flour to a large bowl, add the cocoa powder, and plant-based protein powder. Stir until well mixed.

In a microwave-safe bowl, combine the natural peanut butter and maple syrup. Heat in the microwave on 50% power for about a minute, or until melted. You can also warm them in a saucepan over low heat.

Pour the peanut butter and syrup mixture over the oat mixture. Stir until the mixture is well coated.
