In a large microwaveable bowl, add the peanut butter and honey. Heat in the microwave for 20-second intervals until the peanut butter becomes runny, allowing it to mix easily with the honey

Add the light brown sugar and vanilla extract to the peanut butter mixture, stirring until smooth

Pour the peanut butter mixture into the mixing bowl with the oats mixture, and mix until evenly coated

Fold in 3/4 cup (130g) of the dark chocolate chips. If the chips melt slightly, it's okay
