In a medium bowl, whisk together the eggs, salt, and black pepper. Set aside.

In a non-stick skillet, heat the vegetable oil over medium heat. Add the red bell pepper and onion, and cook until vegetables are tender, about 3-4 minutes.

Pour the whisked eggs into the skillet with the cooked vegetables. Gently move the eggs around the skillet with a rubber spatula, cooking until they are light and fluffy, about 4-5 minutes. Remove from heat.

Wipe out the skillet and return it to medium heat.

Place one tortilla in the skillet, then evenly sprinkle 1/4 cup of shredded cheddar cheese on top.

Scoop half of the scrambled egg and vegetable mixture onto the tortilla, then top with another 1/4 cup of shredded cheddar cheese.

Place another tortilla on top to create the quesadilla. Cook the bottom tortilla until lightly browned, about 2 minutes, then flip and brown the other side for another 2 minutes.

Remove the quesadilla from the skillet and allow it to rest for 1-2 minutes before cutting into triangles. Repeat the process for the second quesadilla.

Serve the quesadillas warm, with salsa on the side if desired.
