Cheesy Turkey Taco-Stuffed Zucchini Boats
These delightful Turkey Taco-Stuffed Zucchini Boats are filled with ground turkey, beans, and corn, topped with cheese and baked to perfection. A delicious, healthy, and easy low-carb dinner for the whole family!
1 small onion
1 lb ground turkey
1 packet taco seasoning
15 oz black beans
drained and rinsed
1 cup corn
1 cup shredded cheddar cheese
2 tbsp olive oil
15 oz crushed tomatoes
5 medium zucchini
Preheat the oven to 400°F.
In a large skillet, heat olive oil over medium heat and add the chopped onion. Cook for about 7-10 minutes until onions are translucent and caramelized.
Add ground turkey to the skillet and cook for another 10 minutes, or until cooked through.
Stir in the taco seasoning packet and mix well. Cook for 1-2 minutes.
Add crushed tomatoes to the skillet, stir and cook for a few minutes.
Mix in drained and rinsed black beans and corn. Cook for another 5 minutes and then set the skillet aside.
Wash and dry zucchini, trim the stems and cut them in halves lengthwise. Using a spoon, scoop the center flesh from each zucchini half, creating a boat.
Place the zucchini boats on a baking sheet or in a baking pan.
Spoon the turkey taco filling into the zucchini boats and evenly sprinkle shredded cheese over the top.
Bake the stuffed zucchini boats in the preheated oven for 30 minutes or until the zucchini is cooked through.
