cubed

1 whole green onion

diced

1/2 cup fresh cilantro

chopped, extra for garnishing

1 can canned diced tomatoes and green chilies

Preheat the oven to 375°F and grease a 9x13 inch baking dish.

CHEESE SAUCE

In a saucepan over medium heat, melt the butter. Stir in the flour, cook for 2 minutes. Gradually stir in the milk and bring to a simmer. Continue to stir until the sauce thickens. Stir in the sharp cheddar cheese until melted and smooth.

MAIN

In a large bowl, combine the chicken, bell pepper, tomatoes and green chilies, 1/2 cup of cheddar jack cheese, chopped cilantro and the cheese sauce.

Pour the mixture into the prepared baking dish and bake for 20 minutes.

BISCUITS

While the casserole is baking, separate biscuits and bake according to package instructions, but for half the recommended time. They should be slightly underdone and starting to rise

MAIN

Remove the casserole from the oven and place the partially baked biscuits on top. Sprinkle the remaining cheddar jack cheese over the biscuits.

Return to the oven and bake for another 20 minutes or until the biscuits are golden brown and the casserole is bubbling.

PRESENTATION

Garnish with fresh cilantro and diced green onions. Serve immediately while hot.
