Slice the 4 bell peppers in half lengthwise and remove any ribs and seeds.

Place the peppers cut-side up in a lightly greased baking dish.

Heat olive oil in a large skillet over medium-high heat.

Add diced chicken, onion, mixed bell peppers, and minced garlic to the skillet.

Season the mixture with salt, black pepper, paprika, and dried oregano.

Cook until the chicken is cooked through, about 10 minutes.
