Cheesy Beer Fiesta Dip
This 5-ingredient cheesy beer fiesta dip is perfect for any gathering, especially on Cinco de Mayo! With added flavor from smoked paprika and Worcestershire sauce, this is a delightful upgrade to a classic queso recipe.
12 oz amber ale beer
8 oz cream cheese
1 tsp smoked paprika
1 tbsp worcestershire sauce
1 lb pepper jack cheese
In a medium sauce pot, pour the amber ale beer and place it over medium heat. Bring to a simmer.
While the beer is heating, cut the cream cheese into cubes and shred the pepper jack cheese.
Once the beer is simmering, add the cubed cream cheese, shredded pepper jack cheese, smoked paprika, and Worcestershire sauce to the pot.
Whisk continually until both kinds of cheese have melted, and the beer cheese dip is smooth and well combined.
Remove from heat, and taste the dip. Adjust salt if necessary. Note that the dip will thicken as it starts to cool. Serve warm.
