This easy-to-make Caprese Arugula Salad is perfect for meal prep lunches during the week. With marinated mozzarella cheese balls, fresh arugula, juicy cherry tomatoes, a garlicky basil balsamic dressing, and some customizable add-ons, you'll enjoy a flavorful and nutritious meal all week long.
Prepare four meal prep salad containers and four small jars for the salad dressings.
2
Divide the arugula greens between the four containers.
3
Place cherry tomatoes in each container, separating the arugula and marinated mozzarella cheese balls to avoid wilting the greens.
4
To make the dressing, in each small jar, combine 2 teaspoons of extra virgin olive oil, 1 teaspoon of aged balsamic vinegar, a pinch of minced garlic, finely chopped fresh basil leaves, and salt and pepper to taste.
5
Seal the salad dressing jars and the glass containers, then refrigerate them until use. The salad should last for 3-4 days.
6
Optional add-ons: Add sliced avocado or grilled chicken when you're ready to enjoy the salad.
