Ingredients: 1/4 cup semisweet mini chocolate chips; 1 cup heavy whipping cream, optional; 2 egg yolks; 1 1/2 cups powdered sugar; 1/4 teaspoon salt; shortening, for frying; 2 tablespoons sugar; 1/3 cup finely chopped maraschino cherry; 4 cups sifted all-purpose flour; 4 cups whole milk ricotta cheese; 1 tablespoon vanilla extract; 3/4 cup white wine; 3 tablespoons butter, softened

This is one of my favorite Italian desserts and the perfect ending to any Italian dinner. The shells are pretty simple to make, and taste so much better than the ready-made shells you buy in the Italian markets. Note that cooking time also includes chilling time.


