Our Autumn Harvest Breakfast Bowl is a rendition of the rustic one-skillet dish that weaves together the flavours of sweet and Umami. Vibrant sweet potatoes teamed up with scrumptious ground meat and crowned with a runny fried egg and tangy homemade salsa, makes this bowl a breakfast for champions.
Set a large skillet over medium heat and pour in the avocado oil.

Once hot, add the diced sweet potato, sea salt and half the black pepper. Cook until the potatoes are tender and lightly browned on the edges, it should take around 8-10 minutes.

In another skillet over medium heat, add the chopped onion, ground beef, remaining black pepper, cumin, and garlic powder. Let it cook until the ground meat is browned and fully cooked, approximately 5-7 minutes.
SALSA

In a separate bowl, combine the chopped tomatoes, sweet onion, jalapeno, cilantro, and lime juice. Toss well and season with salt.
BOWL

Combine the sweet potatoes and the ground meat mixture in the large skillet and gently toss until well combined and warmed through.

Spoon the meat and sweet potato hash across the bottom of a serving bowl.

Top with the sliced avocado, and a fried egg.

Serve hot with a lavish spoonful of homemade salsa on the side.
