Fusilli is a specialty from the Campania region of southern Italy. From the Italian for little spindles, this corkscrew shaped pasta is best suited for meat sauces such as ragu, and ricotta sauces. Made with organic durum wheat semolina using traditional bronze dies, this pasta has a rough textured surface which allows it to better capture and hold sauces once cooked.
